On Monday, we took advantage of the holiday and relaxed at home. After baby girl’s nap, we packed a picnic lunch and walked to a nearby park.
Unfortunately, I didn’t take many pictures. We made some sandwiches with roast beef on hand and took along some super yummy, healthy baby food that Hubbs had spent the morning making. We sat under a beautiful, giant tree at the park and just enjoyed the weather. I feel many more picnics in our future!
The rest of the day was spent relaxing and cleaning up around the house. And then, of course, Bachelorette! Our guilty pleasure!
For appetizers, I made a corn dip that was made up of sour cream, corn, diced tomatoes and chilies, and chili powder.
And chili cheese nachos- a can of chili with beans and some chunks of Velveeta microwaved to perfection. I served them with a side of veggies so as to avoid eating the entire bag of tortilla chips in one sitting.
So sad that our wonderful weekend has come to an end, but I find hope in knowing that the 4th of July is just around the corner. Yipee for summer!
